Ingredients:

For the ribs:

  • 2 racks of pork baby back ribs
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • Salt and black pepper to taste

For the BBQ sauce:

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional for added heat)
  • Salt and black pepper to taste

Instructions:

  1. Preheat your grill or smoker to a temperature of approximately 225-250°F (110-120°C) using indirect heat.
  2. Prepare the ribs by removing the membrane from the bone side of each rack. This helps the seasoning and smoke penetrate the meat.
  3. In a small bowl, combine the paprika, brown sugar, chili powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a dry rub.
  4. Generously coat the racks of ribs with the dry rub on both sides, gently pressing the mixture into the meat to ensure it adheres well.
  5. Place the ribs on the grill or smoker, bone side down, away from direct heat. Close the lid and let them cook slowly for approximately 3-4 hours, or until the meat is tender and begins to pull away from the bones.
  6. While the ribs are cooking, prepare the BBQ sauce. In a saucepan over medium heat, combine the ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, cayenne pepper (if desired), salt, and black pepper. Stir well to combine.
  7. Allow the sauce to simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld together. Remove from heat and set aside.
  8. During the last 30 minutes of cooking, baste the ribs with the prepared BBQ sauce, using a brush to coat them evenly.
  9. Once the ribs are tender and beautifully glazed with the BBQ sauce, remove them from the grill or smoker and let them rest for a few minutes.
  10. Slice the racks into individual ribs and serve them hot, with additional BBQ sauce on the side for dipping.
